Choosing the right time to harvest allows us to have perfectly ripened, small berried and aerated, healthy grape clusters.

Destemmed or not, grapes start to ferment with spontaneous yeasts. Meanwhile, a long period of maceration starts.

The wine is then transferred into large oak barrels. We want our wines pure and authentic, not overwhelmed by the impact of a vessel.
