High altitude ensures lower average temperatures. Big diurnal range during ripening season and cool air coming down from Vermio mountain give freshness and elegance to the wine.

Vinification
Grapes are destemmed, fermented with indigenous yeasts, and macerated for 8-10 hours.
Maturation
4 years in second-use, 500-litre French oak barrels.
